Muffins!!!


I have this thing for muffins, so when I decided I needed to use up some of my bananas, I instantly thought of banana muffins. I added chopped cranberries to the mix and they turned out delightful.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions

  1. Preheat oven to 375 degrees. Lightly grease 10 muffin cups, or line with muffin papers.
  2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Rendering 2 More Options

Option 1:
This one is similar to the first one I did but I changed the floor, cabinet molding, counter top, and back splash. The colors are mostly the same, but there is some added contrast.

Option 2:
I did a reverse of the colors in option 1. I went with a light tile floor, dark cabinets and a lighter counter top. The back splash is the same, the fixtures are the same, and so is the wall color.

This is a slightly spruced up version of my kitchen. I didn't change much but it looks a lot better.

Painting


I did two paintings for my mom for Christmas and I think they turned out rather well. Well I actually did three, but I forgot to take a picture of the third one. I like them and I actually kinda wanted the one at the bar.

Lunch

I got a new tart pan for Christmas that I have been dying to try. I had every intention of making an asparagus tart with it; I even bought all of the stuff, but ended up grilling the asparagus with dinner the other night. In an effort to use the crust I bought, as well as my pan, I made one delish quiche. 

It had:
2 eggs
about 1/4 cup milk
pinch of salt and pepper
hand full of mozzarella
hand full of fetta
tomato slices
refrigerated pie crust

I cooked the crust for 10 min at 450. I put the cheese in, placed the tomato on top, and filled it with the egg mixture. 
I cooked it for another 30 min and it was done.

Happy New Year

So its a new decade and the perfect time for it. I started a blog, graduated, and I am now working on my internship. The new year is going to bring a lot of change for me, but if ever there was a time for it, the new year is it. So here is my first rendering of 2011
